Salmon Chowder Recipe

Note from Terry:  This is for a large crowd - We'll let you do the math to reduce the recipe
 
Fish Stock:
  Fish Frames & Trimmings
  Bay Leaf, 2 Carrots1
  5 Stalks Celery & Large Onion
  1 Teaspoon salt & 1/2 Teaspoon Pepper
   
Cover with Cold Water, Bring to a Boil
Simmer One Hour - STRAIN
 
Chowder:
  1 Lb. Potatoes, & 1/2 Lb. Onion
  3/4 Head of Celery, chopped fine
  1 Green Pepper
  3/4 Lb of Minced Salmon
  2 Qts Milk
  2 Qts Fish Stock
  1/2 Lb. Butter
  1 3/4 Cups Flour
  1 Tablespoon Salt
  1/2 Teaspoon Pepper & Seasoned Pepper
  1/4 Teaspoon Garlic Powder
  1 Teaspoon Parsley Flakes
  Pinch of Thyme and Mace
  Pinch of Bayleaf Powder
   
Saute Chopped Vegetables in Butter
Add Flour and Stir
Add Milk slowly, Add Stock
Bring to Just Under Boil
If Too Thick Add More Stock
Next Add Salmon and Simmer
Lastly Add Seasonings - Taste & Enjoy
